Guillaume Bélisle-Daly

Chef of Soubois restaurant in downtown Montreal, Guillaume Bélisle-Daly first apprenticed at XO in the renowned restaurant of the Hôtel St-James with Éric Gonzalez. He also worked under the direction of S'Arto Chartier-Otis at the bistro of Les Enfants Terribles in Outremont where he became the chef.

Known for his rigor, his creativity and his particular taste for local products, he developed for Soubois a fresh and seasonal cuisine largely inspired by the Canadian terroir and wild products. In the heart of this underground forest, this chef creates a simple menu in which we find the most beautiful products from Gérard de Gaspésie Sauvage, one of the main suppliers for Soubois. He surprises you with extremely fresh products and impeccable quality coming directly from our boreal forests. This experience is renewed each season to offer tasty, balanced dishes making anyone feel the passion coming alive with each bite.
